A nice bottle of wine and delicious food; nothing is more gratifying. We find joy in pairing great wine with simple food. Our travels have led us to a keen appreciation of French, Italian and Spanish inspired dishes. A few simple recipes are provided below for your enjoyment.
Rosemary Garbanzo Pate
Drain a can or jar of garbanzo beans reserving 1 Tbs. of the liquid and place in food processor. Add 1 clove garlic and 1-2 Tbs. fresh rosemary. Slowly add olive oil while blending until you have a smooth paste. Salt and pepper to flavor. Serve with pita bread that has been brushed on both sides with olive oil, salt and pepper and grilled or broiled.
Brush fresh asparagus with olive oil and season with salt and pepper. Grill until brown. Sprinkle with sesame seeds and serve with mayonnaise spiced with a dash of sesame oil.
In a grill pan saute in olive oil a variety of vegetables such as cherry tomatoes, mushrooms, leeks, peppers, and red onions until lightly browned or lined. Drain and chill. Add a clove of garlic and shredded fresh basil to 1/2 cup mayonnaise; serve on the side.
Proscuitto Provalone Bites
Roll out puff pastry and spread with whole grain dijon mustard. Place a layer of proscuitto and provalone cheese onto pastry. Roll tightly, cut into 1 inch wheels and bake at 350 F until cheese begins to slightly brown.
